Cauliflower Cheese Soup recipe
Cauliflower cheese is loved by everyone, so bring it bang up to date in this tasty soup.
Ingredients:
- 1 head of cauliflower
- 1 onion
- 1 potato
- 700ml vegetable stock
- 400ml milk
- 100g mature cheddar cheese
- 1 tbsp. butter
- 1 tbsp. olive oil
- Salt and pepper
Method of Preparation:
Finely chop the onion and chunk the potato. Chop the cauliflower into florets. Grate the cheese.
Heat the butter and oil in a large pan and cook the onion for around five minutes or until translucent. Add the cauliflower, potato, stock and milk, season well, and then bring the mixture to a simmer for 30 minutes.
Blend the soup until smooth and creamy.
Top the soup with cheese to serve.
